Tasty, versatile and easy to cook, split fava beans don’t even need soaking. They’re a good alternative to chickpeas in hummus and falafel, and make a great dhal.
Cover the beans with water or stock, bring to the boil and simmer for 20-50 minutes. The beans will get softer the longer they cook.
